Maple Syrup Garlic Grouse

6 grouse breast
Salt and pepper
1/4 cup flour
3 tbsp butter
2 garlic cloves, minced
1 1/2 tbsp apple cider vinegar (or white or other clear vinegar)
1 tbsp soy sauce
1/3 cup maple syrup
Directions
- Flatten the grouse breasts with a meat hammer or rolling pin. Sprinkle the breasts with salt and pepper, and roll in flour.
- Heat a large pan to medium. When hot, add 2 tbsp of butter and cook the breasts until the flour is golden brown an the meat is fully cooked, about 2-3 minutes per side. Reserve the breasts
- In the same pan, add the remainder of the butter and the garlic. Cook until fragrant, about 30 seconds. Add the soy sauce, the maple syrup and the vinegar. Reduce the sauce until lightly syrupy, about 3 minutes. Add the grouse breast and roll them in the sauce to fully cover.
- Serve with rice and vegetables. Optionally top with sesame seeds and minced green onions.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:
- The grouse breasts can be replaced by chicken breasts found at a grocery store
- The grouse breasts can be replaced by wild turkey breasts, simply cut the turkey breasts in palm sized thin scallops and adjust the cooking.
