Ingredients

  • 30 wild ramp stems, leaves and roots removed, washed

  • 1 cup of white vinegar (or enough to cover the ramp in the jar)

  • 1/4 tsp of salt

  • 1 tbsp of sugar

  • 1 pinch of hot pepper flakes

Directions

  • Add the vinegar, the salt, the sugar and hot pepper flakes to a small pot and mix well. Bring to a boil. Let simmer for 5 minutes.
  • In the meantime, place the ramp in a glass jar. Do not hesitate to compress the ramp in the jar.
  • Add the hot vinegar mix to the jar. If the liquid does not cover the ramp, add hot water to cover.
  • Close the lid and let cool at room temperature for 30 minutes. Place in the refrigerator and the pickled ramp is ready 1 week later!
