Ingredients

  • Steak / Vegetable mix
  • 2 lbs of moose steak

  • Salt and pepper, to taste

  • 1 tsp of Taco seasoning (or a mix of chili powder, cumin, oregano and garlic powder)

  • 1 large bell pepper, diced

  • 1 large yellow onion, diced

  • Mexican rice
  • 1 cup of basmati rice (or long grain rice)

  • 2 cups of chicken stock

  • 1 tsp of tomato paste

  • 1/2 tsp of chili powder

  • 1/2 tsp of cumin

  • 1 pinch of salt

  • Cayenne to taste

  • Burrito
  • 6 large flour tortillas

  • Cheddar cheese, grated

  • Refried beans

  • Salsa

  • Sour cream

Directions

  • Cook the rice: In a pot, add all the ingredients of the mexican rice and cook according to the rice package instruction. NOTE: During the low heat period, turn the heat to minimum and mix the rice once or twice to prevent the rice from burning.
  • Cook the steaks: Pat dry the steaks and season with salt, pepper and taco seasoning. Heat a large pan to medium-high heat. When hot, add a drizzle of vegetable oil and cook the steaks until medium-rare, about 2 minutes per side depending on thickness. Reserve the steaks.
  • Cook the vegetables: In the same pan, add the onions and bell pepper and cook until tender, about 3-4 minutes. Optionally, add the juice drippings from the moose steaks to add flavor and moisture to the vegetables.
  • Assemble the burritos: Heat the tortillas about 30s in the microwave, cut the steaks in thin strips against the grain. Add your desired ingredients in the burrito. In the video below, I added refried beans, rice, cheddar cheese, the vegetables and the steak. I used salsa and sour cream as dipping sauces. Roll the burrito by starting from one side, folding the two ends and tightly rolling the end.
  • Optionally, sear the burrito: Heat a skillet to medium heat. Add the burrito seam side down and cook until browned and crispy, about 2 mins per side.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The moose steaks can be replaced with beef steaks from the grocery store.
  • The moose steaks can be replaced with red-meat wild game, such as deer, goose or duck. Adjust the cooking depending on steak size. It should be noted that bear should always be cooked to well done.
