Amazing Traditional Deer Spaghetti Bolognese

Ingredients

  • 1 tbsp of vegetable oil

  • 2 carrots, peeled and grated

  • 1 large onion, peeled and grated

  • 1/2 tsp of salt

  • 1 lb of ground deer meat

  • 1 lb of ground pork or beef (20% fat)

  • 1/2 tsp of ground black pepper

  • 1 tbsp of tomato paste

  • 3 cloves of garlic, minced

  • 1 tsp of dried oregano

  • 1/2 tsp of dried Chili flakes (or to taste)

  • 1 cup of red wine

  • 2 cups of beef stock

  • 2 cups of tomato sauce

  • 1 tbsp of balsamic vinegar

  • 1/2 tsp of nutmeg

  • 1 cup of whole milk

Directions

  • Heat a large pot under medium-high heat. When hot, add the vegetable oil, the carrots, the onion and the salt, and cook while stirring and lightly mashing until lightly pureed, for 3 minutes. Add the deer, the pork and the pepper. Cook while occasionally stirring until the meat is fully colored and broken down, for 5-8 minutes. Add the tomato paste, the garlic, the Chili flakes and the oregano and cook for 2 minutes while stirring.
  • Add the wine. Rub the bottom of the pot with a wooden spoon to lift any fond from the pot. Let the wine come to a boil and reduce for 2 minutes.
  • Add the broth and reduce to half while occasionally stirring, 5-10 minutes. Add the tomato sauce and reduce to half while occasionally stirring, 5-10 minutes. Add the nutmeg, the balsamic vinegar and the milk. Stir and reduce for another 2 minutes. Taste and adjust seasonings. Add sugar if the sauce is too acidic to your taste. Add pasta water if too thick.
  • Done! Serve the Bolognese sauce on spaghetti or your favorite pasta topped with Parmesan cheese, chili flakes, garlic mushrooms (click here for my mushroom-recipe) and/or minced basil. You can also can the sauce or freeze it for future consumption.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The ground deer can be replaced with grocery bought ground beef.
  • The ground deer can be replaced with any ground red wild game meat. Ex: moose, elk, venison, duck, goose (goose is amazing in this dish!), to name a few.
