The Most Tender Bear Ribs

2 rack of bear ribs (about 2 lbs total)
1/4 cup of red wine vinegar
6 garlic cloves, chopped
1 tbsp of chili powder
1 tsp of dried oregano
1 tsp of paprika
1 pinch of cayenne pepper
2 tsp of salt
1/2 cup of ketchup
1/4 cup of Dijon mustard
2 tbsp of honey or maple syrup
Directions
- In a large bowl, mix the vinegar, garlic, chili powder, oregano, paprika, cayenne, and salt. Add the ribs and rub well to coat it thoroughly. Cover and refrigerate for 1 to 48 hours.
- Preheat the oven or barbecue to 300 °F.
- Wrap the ribs with the marinade in aluminum foil and place side by side on a baking sheet. Cook in the oven or in a closed barbecue until the meat is tender, about 3 to 4 hours.
- In a small bowl, mix the ketchup, mustard, and honey. Brush the ribs with the mixture and continue cooking covered for about 45 minutes.

- The bear ribs can be replaced with grocery bought pork ribs.
