Ingredients

  • Pike Patties
  • 500 g of boneless pike meat (can leave the pin bones in if you use a meat grinder)

  • 1/2 tsp of salt

  • 1/4 tsp of ground black pepper

  • 1/2 tsp of paprika

  • 1/4 tsp of garlic powder

  • 1/4 tsp of cayenne powder (optional)

  • 1 egg

  • 2 cups of panko or bread crumbs

  • 1 cup of vegetable oil (possibly more)

  • Burgers
  • 4 burger buns

  • Mayonnaise

  • Cheddar cheese, thinly sliced

  • Dill pickles, thinly sliced

Directions

  • On a large cutting board, mince the pike meat with a large knife. I recommend cutting long strips, cubing the strips, then mincing the meat. You can also use a meat grinder if you have one on hand or pulse in small batches in a mixer.
  • In a large bowl, mix the pike meat, the salt, the pepper, the paprika, the garlic powder, the cayenne powder and the egg until uniform.
  • Add about 1/4″ of oil in a large skillet. Heat under medium-high heat.
  • Spread the panko on a large plate. Carefully form 4 patties with the pike mix (the patties will be fairly soft). Working one by one, place a patty on the panko. Add some panko on top of the patty and lightly press. Reserve the patties on a large plate.
  • When the oil is hot, add the patties without overlapping them. Cook on each side until golden brown, 3-4 minutes per side. After the first patty flip, add the cheddar cheese on the patties to melt it. Remove the patties from the oil.
  • To serve, grill the inside of the burger buns, spread mayonnaise on both bun half’s, add the patties, then the pickles (be generous) and cap off with the second half of the buns.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The pike can be replaced with any grocery store white fleshed fish, such as tilapia, sole, halibut, etc.
  • The pike can be replaced with any white fleshed caught fish such as bass, walleye or whitefish.
