minutesIngredients
800g of ground moose (or, I prefer 400g of ground moose and 400g of ground pork)
2 tsp of vegetable oil
Salt and pepper to taste
16 thin slices of cheddar (2 per patties should cover their surface)
- ‘Big Mac’ sauce
1/2 cup of mayonnaise
1/2 cup of ketchup
3 tbsp of yellow mustard (optional)
1/2 tsp of paprika (optional)
1/2 tsp of garlic powder (optional)
1/2 tsp of cayenne (optional)
- Burger condiments
4 burger buns
1 cup of iceberg lettuce, thinly sliced
1 small onion, thinly diced
2 pickles, thinly sliced lengthwise
Directions
- Preheat a large skillet under high heat. Form 8 ground moose balls, 100g each.
- When the skillet is hot, add the oil and place 3 or 4 moose balls. Press the balls flat with a spatula to create 1/4” or so thick patties. Do not overlap the patties. Salt and pepper to taste. Grill 2 minutes, flip, add 2 slices of cheddar cheese on each patties and grill for 2 minutes on the second side. Remove the patties from the skillet and repeat for all moose balls.
- Mix all the ingredients of the ‘Big Mac’ sauce to make the sauce.
- Optionally, grill the burger buns. To assemble, spread ‘Big Mac’ sauce on the two half of the buns. Then, on the bottom half of the hamburger bun, stack 2 patties, lettuce, onions, a few pickle slices, and top with the top half of the hamburger bun.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:
- The ground moose can be replaced with grocery bought ground beef.
- The ground moose can be replaced with any ground red wild game meat. Ex: moose, elk, venison, duck, goose (goose is amazing in this dish!), to name a few.
