Simple Wild Turkey Butter Chicken

- Marinade
1/2 cup of plain greek yogurt
1 tbsp of lemon juice
1 tsp of tumeric
2 tsp of garam masala
1/2 tsp of chili powder
1 tsp of cayenne (optional)
1 tbsp of fresh ginger, grated
2 cloves of garlic, minced
2 tbsp of tomato paste
- Butter Turkey
1.5 lbs of wild turkey breast, cut in 1” cubes
3 tbsp of butter (or more to taste)
1 medium onion, diced
1 jar of butter chicken sauce
1/3 cup of heavy cream (or more to taste)
Directions
- In a bowl, mix all the ingredients of the marinade. Then, add the turkey and rest of 30 mins to 6h (if you want your turkey more tender).
- Turn your oven to 475F. Line a baking sheet with aluminum and add a wire rack on the baking sheet. Lay the turkey marinaded on the wire rack. Roast for 15 mins.
- In the meantime, heat a deep pot under medium heat. Melt 1 tbsp of butter and add the onion. Cook until translucid, about 3 minutes. Add the butter chicken sauce, the cream and the rest of the butter. Mix, bring to a simmer and cover for 15 minutes.
- The turkey is done its 15 mins. Now, turn the oven to broil and lightly char the turkey, about 2-4 mins.
- Add the turkey and the drippings from the pan to the sauce. Mix and cook for an additional 5 mins.
- Serve with jasmin rice and naan bread. Optionally, garnish with cilantro or a tbsp of Greek yogurt.
SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:
- The wild turkey can be replaced with store bought chicken breast or thigh.
- The wild turkey can be replaced with ruffed grouse breasts or any other white-fleshed game bird.
