The Best Pickled Wild Ramp

300g of wild ramp stems, leaves and roots removed, washed
3 cups of white vinegar
1 tsp of salt
2 tbsp of sugar
1/4 tsp of hot pepper flakes
Directions
- Add the vinegar, the salt, the sugar and hot pepper flakes to a small pot and mix well. Bring to a boil. Let simmer for 5 minutes.
- In the meantime, place the ramp in a glass jar. Do not hesitate to compress the ramp in the jar.
- Add the hot vinegar mix to the jar. If the liquid does not cover the ramp, add hot water to cover.
- Close the lid and let cool at room temperature for 30 minutes. Place in the refrigerator and the pickled ramp is ready 1 week later!
