Great, Simple Duck Confit Creamy Pasta

Very quick, very easy recipe. However, it is so delicious! The key to the best italian pasta is simple fresh ingredients and following the right techniques!

Great, Simple Duck Confit Creamy Pasta

Ingredients

  • 1 tbsp of butter

  • zest and juice of two lemons

  • 1 cup of cream

  • 100 g of pecorino cheese, grated (or parmesan)

  • 2-3 tbsp of fresh parsley, finely chopped

  • 450 g of linguini

  • 300 g of duck or goose confit, shredded

Directions

  • Bring a large pot of water to a boil. Add 2 tbsp of salt and the linguinis. Cook the pasta until 2 minutes before al dente (2 minutes less than indicated on the package).
  • While the water is coming to temperature, heat a large deep skillet under medium-low heat. When hot, add the butter and the lemon juice. Cook for 2 minutes, until lightly browned.
  • Add the cream, the pecorino, and the lemon zest. Cook fora minimum of 2 minutes, or until the pasta are ready.
  • When the linguinis are ready, fill a mug with pasta water. Add 1/2 cup of pasta water to the sauce. Drain the linguinis and add them to the sauce. Cook while constantly mixing for 2 minutes and add more pasta water if the sauce is getting too thick.
  • While preparing the pasta, warm the duck confit in the micro wave or in a 350F oven for 10 minutes.
  • The pasta are now ready! Serve the pasta topped with the confit, optionally, add pecorino, lemon zest, or freshly ground black pepper on top.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The goose/duck confit can be replaced with 2 grocery bought duck thigh confit.
  • The goose/duck confit can be replaced with 2 grouse breasts or 1/5 of wild turkey breast (300g). Simply fully cook the grouse or turkey before adding to the pasta.
