The Best Snow Geese ”Carne Asada” Tacos

The Best Snow Geese ”Carne Asada” Tacos

Ingredients

  • 2 snow geese breasts

  • 1 tbsp of vegetable oil

  • Asada Marinade
  • Juice of 1 orange (or 1/4 cup of orange juice)

  • Juice of 2 limes (or 4 tsp. of lime juice)

  • 1 cup of fresh cilantro, finely chopped

  • 4 cloves garlic, finely chopped

  • 1 jalapeno, finely chopped

  • 2 tablespoons of soy sauce

  • 1 tsp. of cumin

  • 1/4 cup of vegetable oil

  • Chipotle Crema
  • Juice of one lemon

  • 1/4 cup of sour cream

  • 1 chipotle, extremely finely chopped

  • Toppings
  • 1 cup of red cabbage, finely shredded

  • 1 avocado, cut in thin slices

  • 10 small flour tortillas

Directions

  • Mix all the ingredients of the marinate in a large bowl. Reserve 1/4 of the marinate in a separate bowl for taco topping.
  • With a sharp knife, cut the goose breasts in two to reduce its thickness. Add the goose breasts in the marinate and leave in the refrigerator for 30 minutes, or up to overnight.
  • When you are ready to make the tacos, mix all the ingredients of the Chipotle Crema to make it (or blend in a blender until smooth). After shredding the red cabbage, soak it in cold water while you cook the meat to prevent the cabbage from staining everything.
  • Remove the breasts from the refrigerator, remove as much marinate as you can from them and pat them dry.
  • Heat a large skillet (or your BBQ) under medium high heat. When hot, add 1 tbsp of oil and the goose breasts. Cook two minutes per side (aim for medium-rare). Add 1/4 cup of the marinate to the skillet and turn the breasts in the cooking marinate, for 1 minute. Remove the breasts from the skillet. Thinly slice the breasts across the grain.
  • To assemble, place a few slices of goose breast on the tortillas, some shredded cabbage, a few slices of avocados, a dash of Chipotle Crema and, optionally, some of the reserved marinate.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The goose breasts can be replaced with any grocery bought steak (I recommend skirt steak). Adjust time of cook depending on the size of the cut.
  • The goose breasts can be replaced with any waterfowl breast or venison steak. Adjust the cook time depending on the size of the cut.
