The Best BBQ Wild Turkey Piri-Piri

Ingredients

  • 1 red bell pepper

  • 1 tsp of red pepper flakes (more or less depending on taste)

  • 3 cloves of garlic, lightly minced

  • 1 teaspoon smoked paprika

  • 1/2 cup chopped cilantro

  • 1/2 cup olive oil or vegetable oil

  • Juice from 1 lemon (lemon juice)

  • 1/4 tsp of salt

  • 1 turkey breast, cut into 4 equal portions (I like to cut the shoulder section in half thickness-wise to have all pieces the same thickness)

  • 2 lemons cut in half

Directions

  • Remove the grill of your BBQ. Turn a burner (or start the coal) to its maximum setting. Hold the bell pepper with long tongues directly over the flames (or directly on the coals). Burn the skin of bell pepper until completely black (no more red spots!!).
  • Remove the blackened skin from the bell pepper under running water, remove its seeds and roughly chop it.
  • Place the grill back on your BBQ and turn the heat to medium-high.
  • Blend the bell pepper, the garlic, the paprika, the cilantro, the oil, the lemon juice and salt in a blender until uniformly smooth. In a large bowl, rub half of the piri-piri sauce on the turkey breasts.
  • Oil the BBQ grills and add the turkey breast pieces. Cook 5-6 minutes per side, until the breasts pieces are fully cooked inside. Optionally, cook the lemon halfs for 5-6 minutes, cut side down.
  • Serve the piri-piri turkey with the rest of the sauce and the grilled lemon halves.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The turkey breast can be replaced with chicken breasts. Adjust the time of cooking and, optionally, cut in half, thickness-wise.
  • The turkey breast can be replaced with grouse breasts. Adjust the time of cooking.
