The Best Steak Goose Marinate: Maple-Balsamic, with Strawberry-Maple Salad

Goose is always a bit hard to cook perfectly. However, a great marinate makes miracles! Try this recipe with geese or duck breasts, or venison steak.

This is a very delicious sweet marinate. The vinegar in the marinate will tenderize the meat, while the sweetness of the maple syrup will balance the gaminess.

Ingredients

  • 2 goose breasts (if with skin, score the skin)

  • 3 tbsp of maple syrup

  • 3 tbsp of balsamic vinegar

  • 3 tbsp of soy sauce

  • 1 tsp of vegetable oil

  • Strawberry-maple salad
  • 1 tsp of dijon mustard

  • 1 tbsp of balsamic vinegar

  • 3 tbsp of olive oil

  • 1 tbsp of maple syrup

  • salt and pepper to taste

  • 6 cups of baby spinach

  • 10-12 strawberries, sliced

  • 1/2 English cucumber, sliced

  • 1 shallot, thinly sliced

Directions

  • In a resealable plastic bag, mix 3 tbsp of each: soy sauce, balsamic vinegar and maple syrup, and add the goose breasts. Marinade in the refrigerator for 30 minutes to 8 hours.
  • Heat a large skillet under medium heat. Remove the goose breasts from the plastic bag and pat them very dry. When the skillet is hot, coat the pan with vegetable oil and add the goose breasts, skin side down. Cook until medium-rare, 2×2-3 minutes per side. Remove the breasts from the pan and rest for 5 minutes
  • While the goose breasts are cooking, whisk the Dijon mustard, the balsamic vinegar, the olive oil and the maple syrup in a small bowl. Taste and adjust the salad dressing with salt and pepper to taste.
  • Slice the goose breasts length-wise (against the grain) and serve with a salad made with the spinach, strawberries, English cucumber, the shallot and the dressing.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The goose breasts can be replaced with any grocery bought steak (I recommend ribeye). Adjust time of cook depending on the size of the cut.
  • The goose breasts can be replaced with any waterfowl breast or venison steak. Adjust the cook time depending on the size of the cut.
