Delicious Fried Wild Turkey Katsu/Schnitzel

1 whole turkey breast, well cleaned and cut into (4) portions
1/2 tsp of salt
1/4 tsp of ground pepper
1 cup of flour
1 tsp of paprika (optional)
1 tsp of dried ginger powder (optional)
1 tsp of garlic powder (optional)
2 large eggs, beaten (more if needed)
1.5 cup of Panko (Panko is large bread crumbs)
1 cup of vegetable oil (more depending on the size of your pan)
- Spicy mayonnaise
1/3 cup of mayonnaise
1 tsp of lemon juice
1 tsp of sriracha (or sambal oelek)
1/2 tsp of sesame oil
Directions
- Flatten the turkey breast portions: (1) one portion at the time, rub them with a little amount of oil; (2) place in a large ziploc bag; (3) flatten with a flat meat mallet until uniform, 1 cm (1/3″ to 1/2″) thick.
- Create a 3 station breading setup: (station 1) mix the flour with the salt, the pepper, the paprika, the dried ginger and the garlic powder in a wide bowl; (station 2) beat the eggs in a wide bowl; (station 3) spread the panko on a large plate.
- Heat a large deep skillet under medium-high heat. Add the vegetable oil. You want about 1 cm (1/2″) of oil at the bottom of the skillet.
- While the oil is coming to temperature, bread the turkey portions. Work one portion at the time. Roll the turkey in the flour mix to fully cover and remove excess. Put in the beaten eggs and fully cover the turkey portion. Put in the panko, cover with panko and press on the turkey.
- Once the turkey portions are breaded, place in the hot oil and cook for 3-4 minutes per side, until golden brown. Then, remove from oil.
- Make the spicy mayonnaise by mixing the mayonnaise, the lemon juice, the sriracha and the sesame oil in a small ramequin.
- The turkey katsu are now done! Serve whole with the spicy mayo on the side or sliced and drizzled with the spicy mayo. You can also top the turkey katsu with your choice of: eel sauce, hoisin sauce, sesame seeds, sliced green onions, micro greens or sliced sea weeds.
SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:
- The wild turkey breast can be replaced with grocery store bought (2) chicken breasts, (1) turkey breast, (4) slices of pork loin or (4) pork chops.
- The wild turkey breast can be replaced with 6 ruffed grouse breasts.
