General Tao Wild Turkey to be Craved for

I have to be honest, I cannot stand bland food! I like spicy, I like sweet, I like savory, and there is nothing like Asian food to satisfy those needs. What can be even better is if you can make genaral tao wild turkey yourself at home in 20 minutes! This recipe needs a few ingredients but it is very simple. If you have fried fish before in your life, you can do this one! If you are intimidated by the sauce, just replace it by a store bought one. This is your catch, you enjoy however you can!

Ingredients

  • General Tao sauce
  • 6 tbsp. of soy sauce

  • 6 tbsp. of chicken broth

  • 6 tbsp. of rice vinegar

  • 1 to 2 tbsp. of fresh ginger, finely chopped

  • 3 of cloves garlic, finely chopped

  • 4 tsp. of cornstarch

  • 2 tsp. of paprika

  • 2 tsp. of sriracha sauce

  • 1 tsp. of toasted sesame oil

  • 3 tbsp. of water

  • 1 cup sugar

  • OR
  • 1 cup of VH Schezwan or Teriyaki sauce

  • Crispy Turkey
  • 3/4 cup of canola oil

  • 2 pound of wild turkey breast (one breast and one tenderloin tendon removed), cut into 2 cm x 2 cm (2″ x 2″) cubes

  • 1 cup of cornstarch

  • 2 bell peppers, cut into strips

  • 1 large white onion, cut into strips

  • 2 green onions, thinly sliced at an angle

  • Salt and pepper

Directions

  • The sauce
  • In a small bowl, combine soy sauce, broth, vinegar, ginger, garlic, cornstarch, paprika, sriracha and sesame oil. Set aside.
  • Heat a small small pot under medium heat. Combine the sugar and the water in the pot. Bring slowly to a boil and let it simmer until mixture is lightly caramelized, about 5 minutes.
  • Add soy sauce mixture. Bring to a boil, while stirring constantly. Finally, remove the sauce from the heat.
  • The main show
  • In a bowl, toss the turkey cubes into the cornstarch. Remove any excess corn starch.
  • Heat half the oil in a large skillet under medium-high heat.
  • When the oil is hot, add the turkey cubes one by one. Make sure that the cubes are not touching. You will need to do it in batches (I had to do 3). Flip the turkey cubes every minute until they are golden brown. Fish out the turkey cubes and drain them on a paper towel.
  • Repeat step 3 with the remainder of the turkey cubes. Add oil if necessary (there should be around 1 cm (1/2″) in the pan to fry the turkey. When all done, discard the oil.
  • Use the same skillet for this step. Turn the heat down to medium. Combine the turkey, the bell peppers and the onion in the skillet (the bell peppers and onion will remain al dente). Toss for about 2 minutes. Then, add the sauce and the green onions. Let the mix heat for 1 minute.
  • You are done!
  • Serve with white rice and fried vegetables, and Enjoy!

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The wild turkey breast can be substituted for a store bought turkey breast.
  • The wild turkey breast can be substituted for chicken breasts or chicken thighs
  • The wild turkey breast can be substituted for 6 ruffed grouse breasts
  • For a vegetarian option: the wild turkey breast can be substituted for cubed tofu
