Ingredients

  • Burgers
  • 1 lb of ground deer (or any red game meat)

  • 1/2 lb (225 g) of ground beef or ground pork (choose the fattiest you can, usually 20% fat)

  • 4 Hamburger brioche buns, toasted

  • Thin slices of cucumber

  • Cream cheese sauce
  • 1/2 cup of cream cheese, softened

  • 2 green onions, thinly sliced

  • 1 tsp of soy sauce

  • 1/4 cup of cilantro leaves, chopped (optional)

  • Spicy Korean sauce
  • 1/4 cup of Gochujang

  • 1/4 cup of rice vinegar

  • 1 tbsp of honey

  • 1/2 tsp of garlic powder

  • Asian cabbage salad
  • 1 cup of cabbage, shredded

  • 1 tbsp of rice vinegar

  • 1 tsp of soy sauce

  • 2 tsp of honey

  • 2 tbsp of unsalted peanuts, lightly crushed

Directions

  • In a small bowl, combine the cream cheese sauce ingredients and reserve in the refrigerator
  • In a small bowl, combine the spicy Korean sauce ingredients. Set aside.
  • In a bowl, combine the ingredients of the Asian cabbage salad and reserve in the refrigerator.
  • Mix the ground deer and the ground beef. Form in 4 patties of equal size, slightly larger than the buns. Sprinkle with salt and pepper to taste
  • Heat a large skillet under medium to medium-high heat. When hot, add the patties, leaving a small gap between them. Cook until medium, 2 min per side twice (total of 8 minutes). Remove the patties from the skillet. Brush the spicy Korean sauce on each patty. Optionally toast the buns.
  • To assemble, open the buns, spread 1-2 tsp of cream cheese sauce, add a patty, add some Asian cabbage salad, and, optionally, add additional spicy Korean sauce or your choice of toppings (kimchi, shredded carrots, marinated bean sprouts, 1 egg over easy)

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The ground deer can be replaced with any grocery bought ground meat.
  • The ground deer can be replaced with any ground red game meat. Example: moose, elk, duck, goose.
