Delicious, Simple Goose Burgers; No Meat Grinder!

Ingredients

  • Burger patties
  • 2 skinless goose breasts

  • 1/2 pound of bacon slices

  • 1/2 tsp of salt

  • 1/4 tsp of ground black pepper

  • 1/2 tsp of garlic powder (optional)

  • 1/2 tsp of paprika (optional)

  • 1/2 tsp of chili powder (optional)

  • 1 tsp of vegetable oil

  • Burger condiments
  • 4 burger buns

  • 4 slices of cheese (optional)

  • Your favorite condiments

Directions

  • Remove any silver skin from the goose breasts. Cut the breasts in pieces as small as you can, start with slices across the grain (lengthwise slices). Mince and mix with a big knife for 1-2 minutes, until uniformly finely minced.
  • Cut the bacon across the grain (widthwise). Then, mince and mix with a big knife for 1-2 minutes, until uniformly finely minced. Mix the minced goose meat, the minced bacon and the spices in the burger patties section.
  • Heat a large pan under medium-high heat. Form the patty mix in 4 patties. When the pan is hot, spread the oil across the bottom and add the patties. Cook 3 minutes on both side. Optionally, add the cheese slices on the patties after the first flip. Remove the patties from the skillet.
  • Optionally, grill the inside of the buns in the same pan until golden brown. The burgers are now ready. Place the patties in the buns and top with your favorite condiments.

SUBSTITUTIONS – Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:

  • The goose breasts and bacon can be replaced with grocery bought ground beef. You will then have regular burgers.
  • The goose breasts can be replaced with duck, venison, pigeon or any other red game meat.

Je suis un nouveau chasseur à l’outarde depuis l’an passé, avec pratiquement le même setup que tu utilises: des silouhettes Divebomb (60 + le beau sac brun!) mais nous utilisons un A-frame au lieu de cache-tombeau. C’est tellement de plaisir que j’ai de la difficulté à aller chasser le canard…lol Je suis également de Gatineau, mais originaire de Bouchette et c’est là-bas que nous chassons (3 amis d’enfance!). La découverte de ton site, par l’intermédiaire de Youtube, est exactement ce que je cherchais! Différentes recettes à essayer pour varier le menu. J’ai donc répliqué cette recette de burger et c’était vraiment bon! Même pas, c’était sublime!! Continue de faire de belles vidéos, c’est tellement rafraîchissant de voir des sorties de chasse auxquelles nous pouvons nous y identifier, pas 12 gars qui tire 36 coups sur 2 outardes avec un imbécile en chef qui crie comme un attardé quand vient le temps de tirer…lol
