Cook until lightly the pancetta and mushrooms are lightly browned.<\/li><li id=\"wpzoom-rcb-direction-step-6305817ce01cd\" class=\"direction-step\">In a bowl, mix the eggs and the pecorino cheese until uniform.<\/li><li id=\"wpzoom-rcb-direction-step-6305817ce01ce\" class=\"direction-step\">When the pasta are ready, add them to the pancetta-mushroom mix and add 1 cup of pasta water. Cook while mixing for 2 minutes, add pasta water if it gets dry. Remove the skillet from the heat <em>(SUPER IMPORTANT!)<\/em>. Add the egg-cheese mixture and mix well until you see a cream forming. Serve immediately with additional grated cheese on top and, optionally, chopped parsley or ground black pepper.<\/li><\/ul><\/div><div class=\"recipe-card-notes\">\n\t\t\t\t\t<h3 class=\"notes-title\"><div id=\"substitutions\"><\/div>SUBSTITUTIONS &#8211; Since we do not always have success when going outdoors or not everyone practices hunting, fishing or picking. here are a few ideas to substitute the harvested ingredients:<\/h3>\n\t\t\t\t\t<ul class=\"recipe-card-notes-list\"><li>The wild mushrooms can be replaced with an additional 50 g of pancetta, or grocery bought fresh mushrooms.
